Experience the prehistoric elegance of Dinosaur Kale, a prized Italian heirloom dating back to the 18th century. Known historically as 'Cavolo Nero' (Black Cabbage) in Tuscany, this variety has been a staple of Mediterranean gardens since at least 1777.

This variety is celebrated for its deeply pigmented, blue-green leaves and signature 'alligator skin' texture. With a sweeter, more delicate flavor than curly kale, it is as nutrient-dense as it is delicious. It’s perfect for hearty salads, savory stews, or crisp kale chips. • USDA Hardiness Zones: 2–11 (extremely hardy and versatile)
• Perennial Potential: Typically grown as a biennial; it will grow leaves the first year and flower/seed the second, though in mild climates (Zones 7-10), it can act as a short-lived perennial.
• Sun Exposure: Full sun (6+ hours) is best, but it is very tolerant of partial shade.
• Soil Requirements: Well-draining soil rich in organic matter with a pH between 6.0 and 7.5.
• Planting Time: Early spring (4-6 weeks before last frost) or late summer for a fall/winter harvest. It tastes sweetest after a light frost!
• Planting Depth & Spacing: Plant seeds 1/4 to 1/2 inch deep. Space plants 12–18 inches apart in rows 18–24 inches apart.
• Watering: Consistent moisture is key; aim for about 1–1.5 inches of water per week. Do not let the soil dry out completely.
• Temperature Sensitivity: Very cold-hardy (down to 20°F or lower); it can also handle heat better than most kales, though it may become slightly bitter in extreme summer heat.
• Harvesting: Start harvesting individual outer leaves when the plant is about 10 inches tall. Always leave the center 'bud' intact so the plant continues to grow upward like a small palm tree!
